Walnut Ice Cream

  1. Make a fine paste of walnuts. You can do this by soaking them in water for 30 minutes. Or else if you are in a hurry, you can later add water while grinding them.

  2. In a pan, mix milk and eggs till a fine consistency is achieved. Add whipping cream, sugar and keep stirring till sugar completely dissolves.

  3. Boil this mixture stirring occasionally on a low temperature.

  4. When it is done boiling, strain it into a clean bowl if you want a smooth texture. This is optional.

  5. Add ground walnut into this mixture. Stir well

  6. Freeze this mixture for 3-4 hours.

  7. Sprinkle walnut powder over the top. Enjoy fresh

Chocolate Walnut Fudge

  1. Heat a non stick pan

  2. Add condensed milk, butter, sugar, cocoa powder and vanilla essence

  3. Mix all ingredients well and cook for 2- 3 minutes.

  4. Remove from the flame and add walnuts crumbs. Mix well

  5. Give the desired shape to the mixture, round or square and set aside to cool

  6. Serve with coffee immediately.

Walnut Cake

  1. Finely chop some roasted walnuts and keep them aside.

  2. Preheat oven at 350 degrees F

  3. In a mixer bowl, beat the eggs until they foam. Add sugar and beat the mixture again.

  4. Whisk flour, baking powder and pour the egg mixture into the flour mixture.

  5. Lay the chopped walnuts over the batter. Bake the cake for 30 minutes.

The filling:

You can divide the above batter in two halves and add a filling between the two. The filling can be made with icing sugar, cream and coffee. Spread in the centre of the two halves. Garnish the above layer with powdered sugar and walnut crumbs.
